The Culture

Gauchos are the cowboys of South America - a national symbol of pride and tradition. The residents of Rio Grande do Sul, a Brazilian state, are affectionately referred to as "Gauchos". This state, renowned for its unique churrasco barbecue, is the birthplace of Chef Edmilson Rodrigues. It is there, in Brazil's top barbecue houses, that Ede learned and perfected his craft.

The Founder

Ede Rodrigues

Ede has spread the unique churrasco taste all over the world. He worked as a top chef in Japan, and co-owned several restaurants in China before setting his sights on Canada. In late 2005, Ede launched his Brazilian catering business in Calgary. With overwhelming interest and demand, he decided to open a full-service Brazilian restaurant in 2007, and a new set of cowboys have now come to enjoy all that Brazilian cuisine has to offer - and can enjoy authentic taste in the city of Calgary or while nestled in the mountains of Canmore, Alberta.
